<p>We are proud to showcase award winning chef Jessica Reale for a night of extraordinary food, fine champagnes, and fabulous sailing. Specializing in classic French cuisine she will incorporate local Caribbean flavors in a five course tasting of small plates and appetizers complimented by wines selected by Byron Gregory of Prestige Wines.</p>
<p><em>- Local seafood ceviche served on a bed of greens tossed in citrus vinaigrette</p>
<p>- Mediterranean bruschetta of fresh mozzarella and roasted tomato and olive chutney topped with fresh arugula</p>
<p>- Braised beef shoulder with creamy corn polenta, roasted root vegetables, and fried leeks</p>
<p>- Orange and honey soaked pound cake topped with a sabayon cream and fresh fruit</em></p>
<p>As always, proceeds support the educational programs of the World Ocean School.</p>
